Cut the rolled-out pasta layer into 2 cm (34″) broad pappardelle-sized strips. Cook for 2 to 3 minutes, or until pasta is medium cooked. Toss in as much Bolognese sauce and 2 tablespoons of cooking water as needed. Serve this gourmet pasta topping with a light sprinkling of Parmesan cheese.
Spaghetti Carbonara

Stir in 2 tablespoons of cooking water and toss to coat. Combine the eggplant, chopped chili, and the remaining green onions in a mixing bowl. Cook until well heated. Arrange on a serving platter and top with fresh herbs.
